Sinigang na Bangus sa Murang Sampalok (Fish in Young Tamarind Sour Soup)

Whenever I get the chance, I cook whether for myself or for my family.  The usual daily meal is always easy to prepare and simple.  Just like this sinigang na bangus, preparation is simple and cooking time is quick.  My Nanay has her so many versions of sinigang na bangus.  She can either use tamarind fruit or young leaves, guava, kamias, santol, and even mangoes.  I like guava on the other hand for pork sinigang. She does not prefer to use the powdered substitute.

Now, just make sure you'll have the milkfish cleaned at your local market to make this easy.  Sinigang is not complete without a leafy vegetable so I harvest some in our backyard. I also use young small tamarind fruits, so I need not to boil them and extract the juice. I just layered the tamarind to bottom of the pot with onions and sliced ripe tomatoes, added a cup of water, and allowed to simmer before adding the milkfish.


  • 1 pc medium milkfish or bangus  (about 1 kilo), scaled and gutted
  • 2 cups small young tamarind fruits
  • 1 medium size onion
  • 2 pcs medium, ripe tomatoes
  • fish sauce to taste
  • Camote tops


  • Layer the tamarind fruits, onions and tomatoes in a pot.  Add a cup of water.
  • Allow to simmer for a while and then add the fish on top.
  • Use very low heat and let it simmer for 2-3 minutes until the fish is cooked.
  • Add the camote tops right time when you turn off the heat and then cover.
