Grilled Pork Belly with Grilled Eggplant and Tomatoes – A Favorite Tasty Filipino Lunch
Here’s one delicious combination of a meal that I truly missed eating at lunchtime in the Philippines. It is a yummy combination of grilled pork, and grilled eggplant with tomatoes on the side. This is a typical meal of Filipinos and is best served with steamy rice.
You can prepare this at home with simple ingredients needed. All you have to do is marinate your pork belly (pork liempo) in your desired taste. Some uses calamansi and soy sauce to season or some just uses salt. Then, you can grill your pork liempo and cook the way you want. While grilling your pork liempo, you can also start grilling your eggplant. Before serving, remove the charred skin of the eggplant. Then, create your tomato side dish by dicing tomatoes and onions.
