Fruits are relatively cheap in Riyadh, Saudi Arabia. Here is a simple recipe that you can do when you have too much of citrus fruits, i.e. oranges, tangerines or lemons left in the refrigerator. This requires only short cooking time since we are using fish fillets. The sauce is quick to prepare as well.

Pan Fried White Fish Fillet with Tangerine Sauce

Ingredients:
4 tablespoons olive oil
4 fillets white fish
salt and pepper, to season

For the tangerine sauce:
2 tablespoon butter, softened
1 small onion, finely chopped
1 tablespoon all purpose flour
1/2 cup tangerine juice (about 1-2 pcs of tangerine)
Few segments of tangerine
2 tablespoons water
salt, sugar and pepper to taste

 

Preparation

  1. Season the fish fillets with enough salt and pepper.   Bread the fish fillet and pan fry with olive oil until a bit crusty.
  2. For the sauce, on half of the butter shortly sauté finely chopped onions. Do not brown.  Immediately add the flour and let it cook shortly.  Add tangerine juice and water. Continue mixing for 2-3 minutes and season with salt, sugar and pepper. Add the tangerine segment. When sauce thickens gradually stir in the remaining butter in the hot sauce.

Serving

Put the fried fish fillets on a plate and pour the tangerine sauce on top. You may also like to just serve the sauce on side.
