Fried Rice With ArugulaIf you want to add some vegetables in your ordinary fried rice, why not serve it with arugula on the side. Arugula or rucola is always used in salads, pasta and pizza. Mostly preferred eaten fresh, the taste is rich peppery and somehow pleasantly bitter to pungent flavor that is why it is mostly eaten best with grilled meat or with other leafy greens with salad and or with cheese. It is topped in pizza right after baking.

The idea of eating your arugula with fried rice comes from the rice meal commonly sold in Saudi Arabia called kabsa consisting of grilled chicken or lamb on top of generous amount of cooked basmati rice seasoned with mixed spices of black pepper, cloves, cardamom, saffron, cinnamon, black lime, bay leaves and nutmeg. The arugula together with sliced white onions and tomato salsa is served on the side to compliment the meal. When added to your ordinary meal, arugula boost your diet with copious amount of Vitamin A.

Ingredients:
1 cup cooked rice
2 cloves garlic, minced
1 egg, beaten
3 pcs Vienna sausage
Salt and pepper to taste
Green peas
Arugula

Preparation:
Heat pan with small amount of oil.
Fry the sausage and egg. Set aside.
Sauté the garlic until light brown in color.
Add the cooked rice and green peas.
Add the fried egg and sausage.
Toss and allow to cook for 1-2 minutes.
Serve with arugula on the side.
